Crispy tofu sweet & sour🥢🥡

Serves: 2-3

1 block of firm tofu
4cm piece fresh ginger
1 red onion
1 large garlic clove 🧄
1/4 of a broccoli (or less) 🥦
1/2 red bell pepper

200ml pineapple juice 🍍
50ml ketchup
50ml rice vinegar
60g coconut sugar (or brown sugar)
1 tsp garlic powder

2 Tbsp sunflower oil (or other)
1/2 tsp fresh chili
4 Tbsp cornflour
1 tsp soy sauce
50g tinned pineapple chunks (optional)

1️⃣ pat the tofu dry with kitchentowel and cut it into square pieces
2️⃣ finely chop the garlic, ginger, chili and onion. Cut the broccoli and bell pepper into pieces.
3️⃣ mix together in a sauce pan: pineapple juice, ketch up, rice vinegar and sugar. Heat and stir to dissolve sugar and let it cook until it has thr consistency of syrup.
4️⃣ in a bowl mix together: cornflour and garlic powder. Carefully cover your tofu in it.
5️⃣ add oil to a frying pan and heat it up. Add your tofu and fry until golden brown.
6️⃣ heat some oil in another pan and cook the onion, garlic, chili and ginger (about 5 minutes)
7️⃣ add the broccoli, bell pepper along with the tinned pineapple
8️⃣ add the tofu and pour over your sauce until everything is well covered and let it cook for another 5 minutes on medium heat.
