Vegan sweet and sour chicken🥢🍚haven‘t had such a good one in a long time🙌🏻 –
Recipe for the sauce:
1-2tsp vegetable oil
2 garlic cloves (minced)
2 tsp minced ginger
Put the oil in a pot and fry the ginger and garlic. Add the rest of the ingredients:

1/4 tsp chili flakes
1/3 cup rice vinegar
1/2 cup water
1/2 cup agave nectar
1Tbsp ketch up
2Tbsp soy sauce
2tsp cornstarch mixed with 2 tsp water
Let it cook until it thickens.

Recipe for the batter:
1 can (180g) mock meat (from an asia store: fried gluten) or 1 tofu block (firm)
1/3cup vegetable oil (for frying)
1cup flour
1Tbsp cornstarch
1/2tsp salt
1/2tsp paprika powder
Some black pepper
1 cup cold water (works best with soda water)
Mix it all in a bowl
Dry the mock meat and put it in the batter and then fry it in a pan. Place it on paper towels to get rid of excess oil and then put it in the sweet and sour sauce and serve with rice or whatever.
