It‘s finally time for pumpkin soup!🎃 so excited for autumn🍁
Ingredients:
1 medium butternut squash
2 onions
2 garlic cloves
2 carrots 🥕
750ml vegetable broth
300ml coconut milk🥥
1 tsp curry paste
Salt and pepper
Instruction:
1️⃣ preheat oven on 200 degrees
2️⃣ cut up butternut squash and place it on the baking tray along with the peeled onion, garlic and carrot
3️⃣ let it bake for 30-40 minutes
4️⃣ put it all in a mixer along with the broth and coconut milk
5️⃣cook it in a pot for another 10minutes and add the curry paste
6️⃣add some salt and pepper to taste 🧂
