VEGAN CHICK’N FRICASSEE 🐓

You requested it, and here’s your delivery: A good old chicken fricassee but vegan! I do admit, that I upgraded the typical fricassee a little to make it even better than the original ☺️

What you’ll need for 2-3 Portions:
1 Package Vegan Chicken Chunks (~200g)
3 Carrots, chopped
1/2 Cup Peas, frozen (80g)
1/2 Red Bell Pepper, chopped
~200ml Veggie Broth
1/4 Cup Sweet Corn (40-50g)
200ml 🌱 Cream (I used alpro soy cuisine)
1 Tbsp Nutritional Yeast
Nutmeg & Paprika Powder
Salt & Pepper

👉🏼 Heat up a pan with a little bit of oil on medium and fry the chicken chunks. Set them aside in a bowl & add carrots, bell pepper & peas to the pan. Combine cream & nutritional yeast and season it with a pinch of salt & pepper.

👉🏼 Only cover veggies with broth and let them simmer for about 6-7 minutes. Add the corn, chicken and seasoning to taste. Then pour in cream mixture & let it simmer for another 2-3 minutes.

👉🏼 The sauce should be creamy by now. If it’s still a little runny, add more cream – if it’s too thick for your taste add some plant milk or broth. Taste your sauce and give it a last dash of seasoning.

I topped my vegan chick’n fricassee with cooked rice, but you can also add pasta or dip in some bread. Either way it’ll be a heart warming dish 🙈
