You really don’t know how long it took me to decide on naming this recipe and no! I’m still not satisfied with it but who cares, not every recipe can have a super cute or fun name haha

But one thing is for sure: They are all tasty af and if you haven’t tried any of my recipes yet you definitely missed out 🤯

So here’s another chance for you to get your hand on a delish meal:

200-250g 🌱 Mince (or crumbled tofu)
1/2 Cup Peas (or a good handful)
1/2 Zucchini
2 Carrots
2 Scallions
1/2 Red Bell Pepper
400g Chopped Tomatoes, canned
Red Wine (optional)
Salt & Pepper

👉🏼 Chop all your veg, heat up a pan with a little bit of oil and fry your mince. Set the mince aside in a bowl and now fry your veg in the pan with a splash of water. Season it now.

👉🏼 Add the mince back into your pan and combine with the veg. Deglaze everything with a good splash of red wine and let it simmer for 3-4 minutes (or not lol). Add your tomatoes and chopped parsley and turn down the heat.

Pre heat the oven to 200C/400F.

For the topping:
5 Tbsp Nutritional Yeast
100g 🌱 Cream Cheese or Crème Fraiche
Garlic (minced or grounded)
Salt & Pepper
Splash of Water

👉🏼 First combine yeast, cream and seasoning, then add water until the mixture is creamy but not thick. Place filling into a baking dish and spread it gently with the topping.

Bake for 30-40 minutes and let cool for 5 minutes before you dig into it – it’s hoooot!

I added some sweet potato fries when I prepared this dinner, but it’s as great on it’s own or with some bread or pasta.
