CARROT CAKE PROTEIN PANCAKES ๐Ÿงก๐Ÿฅ•๐Ÿฅž

Weekend screams for sleep and pancakes for breakfast – tbh I can hear this scream already on a Thursday haha

My favorite recipe for pancakes doesnโ€™t change much but adding carrots makes it extra nutritious and cakey! ๐Ÿ˜

All the for 2-3 portions of pancakes are right here for you:

1 Ripe Banana
60g Vegan Protein (myvegan carrot cake protein) or more flour
1-2 Carrots, shredded
100g Flour
1 Tsp Baking Powder
Pinch of Salt
~250ml Sparkling Water or Milk (you may need more or less depending on the protein youโ€™re using)

๐Ÿ‘‰๐Ÿผ Mash banana and mix all dry ingredients together. Combine banana, shredded carrot & liquid. Add dry mix into wet and stir gently. Let sit for 10 minutes.

๐Ÿ‘‰๐Ÿผ (Add more water/milk if the consistency got too thick) Bake your pancakes on medium heat until bubbles appear. Flip and bake for another 1-2 minutes.
