GRANDMA’s HAZELNUT CAKE – now it’s VEGAN 🌰😍

I always loved grandma’s cakes and cookies. I admired how many delicious recipes she was creating and it took me a while to realize that all of her baking skills not only came from practice but also from failure.

Thinking back today, this tought me one important lesson in life: Not only recipes develop over time, but so do we!

Are you ready for my Grandma’s delicious Hazelnut Chocolate Cake? ☺️

Here’s my veganized version:

Preheat the oven to 160C / 320F

5 Flax Eggs

👉🏼 Combine 5 Tbsp shredded seeds + 15 Tbsp lukewarm water and let sit for 10 minutes minimum.

150g Butter (you can swap out 50g for Soy Yog)
180g Erythritol (Sugar, Coconut Sugar or Cane Sugar should work but can change the taste)

👉🏼 Melt butter and whisk it together with sugar until creamy. Gradually pour in your flax eggs “one by one” while continuously mixing.

150g Ground Hazelnuts
100g Dark Chocolate, chopped

👉🏼 First add nuts, then add the chocolate.

120g All purpose Flour
1/2 Tsp Baking Powder
1/2 Tsp Baking Soda (or more BP)

👉🏼 Combine flour, BP & BS and whisk into the mixture. Be careful and don’t overdo it here to get an airy batter.

👉🏼 Place batter in a lined or greased baking pan (18cm-20cm) and bake for 40-45 minutes (until a toothpick comes out pretty clean). Remove the cake from the oven and cool down completely.

Add icing sugar or powdered sugar, if you like – then enjoy! 😍
