A delish plate of ROASTED VEGGIES & TOFU 😍

Couldn’t help myself tonight and needed something light & quick to make without anything fancy 🙈 So cheers to a roasted Monday dinner with lots of greenery and plant based protein!

For everyone in need of the details, I chopped the ing things for 2-3 portions:

1 Carrot
1/4 Bell Pepper
1/2 Zucchini
1 Broccoli
1 Bunch of Asparagus
2 Cloves Garlic
1 Block Tofu

Marinated all veggies in 1-2 Tbsp oil and seasoned it with salt, pepper, paprika powder and oregano. I added 1 minced clove to the mix and placed it in the oven for 30 minutes at 200C.

I marinated the tofu for 10 minutes in 3 Tbsp Soy Sauce, 1 Tbsp Mushroom Sauce and about 1-2 Tsp Lime Juice. Added the other clove of garlic, some ginger powder, black pepper & cumin. Then also placed it in the oven for remaining 20 minutes.

And that’s it! Just a few minutes of prepping and you have a super easy and very nutritious meal 😊 Def recommend using your fave veggies and source of protein to make this dinner your own!
