VEGAN ASPARAGUS CHILI
Yay, finally a new recipe! I’m typing this caption with 1 & 1/2 hands. If you haven’t seen it in my stories: I need to wear an orthopedic splint for 2 weeks due to a tendon inflammation in my right hand wrist. Let me tell you it’s not cool but I’ll deal with it as good as possible😛
But now it’s time to enjoy the good things in life and spice up your spicy chili with some asparagus. It may sound unusual – which it def it – but it tastes veryyy good!
Here’s the recipe for 2-3 portions:
2 Packs of Vegan Mince or Crumbled Tofu
1 Can Corn
1/2 Can Kidney Beans
1 Can of Chopped Tomatoes
1/2 Red Onion
1 Tbsp Oil
1 Cloves Garlic, minced
Salt & Pepper
👉🏼 Chop all the veggies. Heat oil in pan and fry red onion. Add mince, asparagus & zucchini.
👉🏼 Season mince and add garlic, then combine with beans & corn. Pour in tomatoes and let simmer for a 10-15 minutes. Season again to taste.
We made this yesterday and paired it with some creamy quinoa – it was a.m.a.z.i.n.g 😍
