TORTELLINI in VEGETABLE SAUCE
This recipe is as simple as it can get! Just some pre made Tortellini by vantasticfoods with leftover veggies in a basil tomato sauce 🙈
All you need for 2 portions:
1 Package Tortellini
500ml Tomato Sauce
1 Red Onion
Handful of Kale
Clove of Garlic
Salt & Black Pepper
👉🏼 Cook Pasta according to package. Chop your veggies, salt the eggplant and set it aside for 10 minutes.
👉🏼 Fry onions with zucchini and garlic on medium heat with a splash of water. De-salt the eggplant and add them to the pan with the tomato sauce.
👉🏼 Add cooked tortellini, chopped basil, kale & seasoning to sauce and let simmer for 2-3 minutes. (Add a little water/cream if necessary)
