LETTUCE TACOS & SWEET POTATO FRIES

I know what you think: Louisa, are you serious? Why don’t you use real taco shells? I thought you’re enjoying your new food freedom and intuitive eating? And the answer is yes, I do!

But don’t get me wrong I still like my lettuce tacos when I’m not extremely hungry, and if I want a real taco (like yesterday evening) I eat it – it’s about balance not about pushing myself to the limits with every meal, right? 🥰

So here’s me still eating my veggie packed foods but with a less controlled mind and also adding some extra ingredients I’d have never added before. Cheers to recovery 💕

Now to the details of these delish tacos! All you need is:

Romain Lettuce or Taco Shells
1 Package of Vegan Mince or Tofu, crumbled
1 Carrot
2 Handful of Kale
4-5 Tbsp of Tomato Sauce
1 Scallion
Paprika Powder, Chili, Black Pepper & Salt

👉🏼 Fry chopped carrot and kale in a pan with a splash of water. Add mince, spices and tomato sauce, then let it simmer on low heat until all water is dissolved.

For the Sauce:
Soy Yoghurt
Parsley
Garlic Powder
Salt & Pepper

For the Fries:
1 Sweet Potato
1 Tbsp Oil
Salt & Garlic Powder

👉🏼 Cut potato in slices, add oil & spices and place in the oven or air fryer for 30 minutes at 180C/350F. (Don’t let them touch in the oven to make them crispier)

Fill your tacos with mince & enjoy your delish lunch or dinner ☺️
