TACO STYLE CRUNCH BOWL 🌮😚
Wow! I haven’t posted in 2 days and it already feels like ages have passed since then haha – I guess posting recipes took over my life by now and I must say I love it!
So here’s my contribution for today: A super simple (as always) yet super delish & colorful “taco” style bowl with roasted chickpeas, crunchy tortillas and smooth guacamole!
Recipe for 2:
1 Package Vegan Mince (~180g)
4 Handful Lettuce
1 Tomato or 1-2 Handful Cherry Tomatoes
1/3 Can Kidney Beans, washed (~60g)
1/3 Can Corn, washed (~60g)
1/2 Can Chickpeas, drained
Guacamole (1 Avocado, Lemon Juice, Salt & Pepper, Chili, Soy Yoghurt)
👉🏼 Prep all veggies, mix beans & corn, fry mince in a non stick pan with a splash of water, season and set aside.
👉🏼 Place chickpeas into non stick pan on medium heat & fry with salt & pepper, add some herbs like thyme or parsley – I also added fresh chopped cilantro.
Place lettuce in the middle of your plate and assemble all other ingredients around it, lastly add guacamole and sriracha if you like a little spice.
Enjoy your crunchy bowl with crushed tortillas on top or dip them into the mixed up bowl 😍
