SIMPLE GLUTEN-FREE CARROT CAKE
I’m really no fancy baker here, I just love to bake things that are easy, fast and nutritious – and I’m a massive carrot cake fan girl 🥲😍
Time to introduce to you this super easy, really moist, gluten-free and of course sugar-free carrot cake. It’s so good!

200g Carrots, shredded
165g Apple Sauce
1 1/2 Tbsp Oil
2 Tsp Apple Cider Vinegar
225g GF Flour (any other should work!)
2 Tsp Cinnamon
1/2 Tsp Baking Powder
1/2 Tsp Baking Soda
Pinch of Salt
100g Sweetener (used Erythritol as usual)
20g Cashews/ Nuts (optional)
30g Raisins (optional)
Topping:
90g 🌱 Greek Yoghurt
1 Tbsp Lemon Juice
Vanilla Flavor
Cinnamon
1️⃣ Pre heat oven to 180C (360 F). Grease or line a baking pan.
2️⃣ Combine carrots, apple sauce, oil and vinegar in a bowl and let rest for 15 minutes minimum. Combine dry ingredients separately (without nuts & raisins).
3️⃣ Add dry into wet ingredients and stir until smooth. Fold in nuts and raisins now, then pour into baking tray and bake for about 30 minutes.
💫Pro Tip: Let the cake cool down entirely before adding the topping & this cake tastes best on day 2 – so hold your breath and wait, if possible 😛💫
