CAULI & TOFU SALAD BOWL

Ate this bowl yesterday for dinner and fell in love! I ate all my favorite veggies, topped them with a hummus-yoghurt dressing and added an amazing marinated tofu as a source of protein.๐Ÿ˜

๐ŸดRECIPE๐Ÿด
[CALS 445 ~ 44C ~ 30P ~ 15F]

200g Cauliflower
120g Salad
1/2 Bell Pepper
1/2 Tomato
1 Carrot
2 Tbsp Red Cabbage
80g White Beans (canned in tomato sauce)
4 Small Gherkins

โ–ถ๏ธ Cut all veggies. Cook cauli and season to taste (I used salt, pepper & mixed fresh herbs).

For the marinated tofu:
100g Tofu
1 Tbsp Soy Sauce
1 Tsp Lemon Juice
1 Clove Garlic
1 Tsp Sesame Oil
Black Pepper, Chili & Cumin
optional: Ginger

โ–ถ๏ธ Cut tofu in cubes and marinate with other ingredients. Then fry in a non-stick pan.

For the dressing:
2 Tbsp Soy Sauce
3-4 Tbsp Natural ๐ŸŒฑ Yoghurt
1 Tbsp Hummus
1 Tsp Mustard
1/4 Lemon Juice
Few drops of sweetener (i.e. stevia, maple syrup, agave syrup)
Black Pepper & Paprika Powder

โ–ถ๏ธ Combine ingredients and season to taste.

I also added some fresh parsley and another tablespoon of hummus for some extra spice ๐Ÿ˜ฌ
