PEANUT BUTTER NOODLE SALAD 🥜
I know it seems repetitive but I love love love rice noodles so much I could eat them every day! This salad of course can be made with any other pasta of your choice – it’ll still be delicious 🥳

1/2 Red Bell Pepper
200g Tofu (I used pre-seasoned tofu “Indian Style”)
1 Tbsp Nutritional Yeast
1 Tbsp Lemon Juice
2 Tbsp Peanut Butter
2 Tbsp Soy Sauce
1 Tbsp Mushroom Sauce / Hoi Sin Sauce
Sweetener (I used a few drops of liquid stevia)
Splash of water
1️⃣ Cook pasta according to package instructions. Chop all veggies and fry parsnip, carrot, zucchini and bell pepper in a pan with some water. Season to taste with salt & pepper, paprika powder, garlic powder, curry and cumin.
2️⃣ Mix tomato, cucumber and salad in a large bowl. Combine dressing ingredients and set aside. Either fry tofu now or add it cold.
3️⃣ Time to make the final salad: Add fried veggies, pasta and tofu into the bowl with cucumber, tomato and salad. Mix it up then pour in the dressing and mix until everything is well combined!
Give it a taste, season your salad again if necessary with some good old spices and then dig deep into your plate of delicious veggies! ☺️
