CREAMY CARROT PARSNIP SOUP 🧡
OMG you have to try this soup! 🤯
I always forget how good soup can taste and every time I’m making one it just blows me away again and again and again – literally with every spoon 🥲😂
💫Tip: I always prepare my soup a little in advance. That way all the spices can do their magic and when it’s time to eat I heat it up again and do the final touches like adding a little more water or seasoning.
🍴RECIPE for 4 Portions🍴
[1/4: CALS 163 ~ 27C ~ 6P ~ 4F]
1 Tsp Oil (~5g)
1 White Onion (~120g)
3 Cloves Garlic
1 Tsp Ground Basil
1 Tsp Ground Thyme
1/2 Tsp Cumin
1/2 Tsp Black Pepper
1/4 Tsp Chili Powder
4-5 Carrots (~330g)
2 Parsnips (~215g)
60g Red Lentils
1 Tsp Salt
70ml Coconut Milk
1️⃣ Heat up the oil in a large pot and add chopped onion and garlic to fry on medium heat. Add spices and a splash of water – let it simmer for 1-2 minutes.
3️⃣ Chop carrots & parsnip and combine well with spices. Let it fry for another 1-2 minutes.
4️⃣ Add lentils, salt and water. Let simmer on medium heat for 20 minutes. Reduce heat to low, take about 1/3 of the remaining water from the pot and place it in a bowl.
5️⃣ Blend everything together, pour in coconut milk and start adding the water back to create the perfect creamy consistency.
