SIMPLE VEGGIE PLATTER 🥦
Yesterday I was craving something really unusual for me: a vegan cordon bleu haha. To make it a relatively balanced dinner I decided to add a lot of veg – we all know balance is key right? 😇
This won’t be a typical recipe but I do want to share what I did with you!
I cut 2 carrots & 1 pars pic, cooked it in a pan with a splash of water, drained them and added 100g of tomato sauce as a marinade. Then I used 300g of frozen broccoli rice, sautéed it with 1/2 onion and added 50g of coconut milk. What’s left is 100g of red cabbage, 1 scallion and of course the delicate cordon bleu from ruegenwaldermuehle – I can tell you it was a feast! 😎

This is just a quick reminder for you that you can eat whatever you’re craving whenever you want! I for myself just really like to add veggies to every meal to keep me full, satisfied and get all nutrients in that my body might need 🙈
