SPICY TURMERIC RICE BOWL 🌶

🍴RECIPE for 2 Portions🍴
[1/2: CALS 651 ~ 68C ~ 63P ~ 10F]

160g Rice (I used red lentil rice)
1 Red Bell Pepper (160g)
1 Tsp Turmeric
Salt
Chili to taste

2 Handful Arugula (60g)
180g Vegan Chicken (I used likemeat_int but you can also substitute it with tofu or any other source of protein)
1 Broccoli (~400g)
2 Scallions

Dressing:
1 Tbsp Worcester Sauce (or Soy Sauce)
50g Tomato Sauce
100g Plain 🌱 Yoghurt
2 Tbsp Nutritional Yeast (10g)
Salt&Pepper
Turmeric & Chili to taste

1️⃣ Wash, then cook rice according to package, add bell pepper and a little more water. Then stir in turmeric and season to taste. Cook broccoli and fry your protein.

2️⃣ Meanwhile combine ingredients for the dressing and set aside. Drain and season broccoli.

3️⃣ Place arugula, rice, broccoli and protein in 2 bowls or into some meal prep containers. Lastly, it’s time to drench your bowl in dressing haha
