SIMPLEST SALAD BUDDHA BOWL 💯
Sometimes it’s all about the simple things in life! 10 more days to go in and I am really happy to see that many people actively participating and trying to make a positive impact – so congrats to everyone of you and all my already vegan fellows! 🥰
Now to another simple bowl in my life as a working student with literally no real time schedule and always throwing together what’s left in my fridge 😅

1/2 Red Bell Pepper
70g Cherry Tomatoes
150g Smoked Tofu
1 Tsp Sesame Oil (5g)
1 Tbsp Soy Sauce
1 Tbsp Mushroom Sauce (HoiSin Sauce or Vegan Oyster Sauce)
2 Tbsp Soy Yoghurt (50g)
1/4 Lime Juice
1️⃣ Cook broccoli & fry zucchini (and tofu if you want it hot). Season both to your taste, I used only salt & pepper this time.
2️⃣ Meanwhile wash and chop all veggies. Mix up the dressing and set aside.
3️⃣ Place all veggies in a large bowl and add tofu. Stir your dressing and add a splash of water if needed, then cover everything with it.
