HEALTHY TAHINI & RICE NOODLE SALAD

I’m obsessed! This salad was my perfect comfort food last week and an easy prepared vegan dinner. All ingredients can be found in your supermarket and there is no need to read 1000 steps on how to prepare it!

🍴RECIPE for 2🍴

100g Rice Noodles (can be replaced by any other sort of noodles)
2 Carrots
1/2 Broccoli (~120g)
100g Bean Sprouts
2 Handful of Salad (~80g)
250g Tofu (I used a package of pre-seasoned chili tofu)
Cumin
Salt & Pepper
Chili

Dressing:
1 1/2 Tsp Lime Juice
2 Tbsp Tahin (30g)
1 Tbsp Maple Syrup
2-3 Tbsp Soy Sauce
1 Tbsp Nutritional Yeast (or natural vegan protein/ flour)
1 Clove Garlic, minced
1 Tbsp Worcester Sauce (or mushroom sauce/ vegan stir fry sauce/ hoi sin sauce)
Splash of Water

Topping: 2 Tbsp Crushed Peanuts

1️⃣ Cook noodles according to package, steam/boil broccoli & carrots, chop salad. Fry the tofu in a non-stick pan (you may have to add a bit of oil). Add all noodles and veggies to the pan.

2️⃣ Combine all ingredients (expect water) for the dressing and add it to a pan on low heat. Mix it well and add water if the sauce is too thick for you. Season your salad and serve it warm or let it cool down and add peanuts on top.

I can totally recommend eating it with a bit of sriracha and cilantro! You can easily prep the dressing in advance or make a larger amount to serve more people with this delicate dish! 🤫
