QUICK VEGAN BOLOGNESE w/ a TWIST 🤫
Guys, you need to try this tasty pasta bolognese with a little twist! Yesterday I didn’t knew what to make for dinner, it was late & I had some leftover veggies in my fridge – so my bf suggested bolognese and we came up with this twisted version, very simple and perfectly cooked in only 20 minutes!🤩
On top of that, it is healthy & super filling due to the portion size and the amount of veggies in it! I really recommend it especially for all of you “newly vegans” trying it in

1 Can Chopped Tomatoes (~400g)
1/2 Can Tomato Sauce (~200g)
1 Small Fennel (~180g)
1 Celery Stick (don’t worry, you won’t taste it once it’s cooked)
2 Packages Vegan Mince (~360g)
1/2 Onion (~40g)
1 Clove Garlic, minced
160g Spelt Fusilli (you can totally use more/less or a different kind of pasta, but fusilli holds on to the sauce very well)
1️⃣ Cook the pasta according to the package. Chop the veggies into small cubes and heat up a large non-stick pan.
2️⃣ Add all veggies into the pan with a splash of water and let them simmer until the water evaporates. Then add vegan mince and garlic – fry everything up.
3️⃣ Add chopped tomatoes & sauce, season with oregano, paprika powder, black pepper, salt & basil. Let everything simmer for 10-15 minutes until the bolognese has the perfect consistency for you!
▶️ If you can’t find vegan mince, simply use red lentils & chopped mushrooms or crumble up some tofu! 🤗
Garnish your bolognese with some fresh herbs & vegan cheese to get the most out of it!
