THE PERFECT TOFU BOWL 🤙🏼

You may have seen this dinner in my latest “What I eat in a day” reel – if not, go watch it for some vegan inspo!

This dish is super easy, delish and perfect for a simple dinner or to meal prep for the week! You need to give it a try especially if you’re into garlic haha just like me…

🍴RECIPE for 2🍴

140g Basmati, raw
400g Broccoli
200g Zucchini
200g Tomato Sauce
300g Firm Tofu
2 Cloves Garlic, chopped

1️⃣ Cook the rice according to package instructions. Cook broccoli in salted water.

2️⃣ Pre-heat a pan with some water and add the zucchini, then the cooked broccoli and season to taste once the water is gone. Set veggies aside.

3️⃣ Use the pan to make your garlic tomato tofu by adding some water and the tomato sauce, salt & pepper and herbs. Then add your tofu and chopped garlic and let it simmer for a few minutes.

💁🏽‍♀️ Time to serve: Season everything to your own taste and enjoy a simple meal at home or on the go.
