Yup, that’s right! This soup is the perfect way to end a long & stressful day without having to stay in the kitchen longer than 10 MINUTES 😍
🍴RECIPE FOR 2🍴
200ml Coconut Milk
600ml Vegetable Stock
2 Cloves Garlic
Salt & Pepper
1️⃣ Break cauliflower into florets and also cut the stem into pieces. Roughly chop the onion. Heat up a pot, bring the vegetable broth to boil and add the cauliflower & onion.
2️⃣ Once the cauliflower is cooked, set 1/2 of the remaining broth aside before you start blending. Add your garlic cloves and blend until the texture gets smooth.
3️⃣ Pour the coconut milk into the mixture and season it. Now see how thick you like the soup to be and either add some broth back or not.
4️⃣ Garnish your soup with your favorite toppings! I added scallions & pan fried some cherry tomatoes – so good! 🙈
