VEGAN GREEN BEAN & CHICKPEA CURRY with TOFU 🌿
Just finished this delicious dinner! It contained 42 GRAMS of PROTEIN completely plant-based. So if anybody asks you how you get enough protein, here’s the perfect recipe to show them! 🤩
50g Red Lentil Rice (you can use any kind of rice)
150g Green Beans
150ml Coconut Milk
1/2 Yellow Pepper
1/2 Red Onion
1 Clove Garlic
1 Tsp Oil
1/2 Tbsp Curry Paste (I used a green one)
1️⃣ Chop all veggies and the tofu. Heat the oil in a pan. Add and fry the chopped onion. Prepare the rice according to the package instructions.
2️⃣ Add the carrots, beans and some water to steam them in. Once they get softer and the water evaporates, add the yellow pepper and garlic. Stir everything together and season it with salt & pepper and cumin. Afterwards add the tofu.
3️⃣ Mix the coconut milk with the curry paste and stir it into the pan. Let everything simmer (cover your pan if possible) until the fluid thickens up. Taste your curry and serve it with the cooked rice.
