Healthy Spicy Quinoa Salad with Baked Zucchini 😊
Isn’t quinoa to die for? Especially in combination with some chopped carrots, red onion and beautifully baked zucchini stripes! 😍
1/2 Red Onion
1 tsp Sesame Oil
1 tbsp Hoi Sin Sauce
1 clove Garlic
1/2 tsp paprika powder
1/2 tsp garlic powder
Pinch of chili powder
Salt & Pepper
1️⃣ Pre-heat your oven to 200°C (400°F). Use a peeler to peel the zucchini into thin strips. Leave out the inner part of the zucchini, as this is the part that contains the most moisture. Salt the zucchini strips and press out the fluid after 5 minutes by using your hands or a kitchen towel. Season the strips with salt, pepper and garlic powder. Place them onto a baking tray and put them in the oven for 10-15 minutes.
2️⃣ Wash the quinoa in a sieve and let it simmer on medium heat with 80ml water in a pot. When the water has evaporated but the quinoa is not yet fully cooked, add a little more water until it has the right consistency for you.
3️⃣ While the quinoa is cooking: Cut the inner stem of the zucchini into small pieces. Mince the glove of garlic. Cut the carrot into slices and the onion into small pieces and fry both in a pan with the sesame oil. Add the zucchini pieces and the garlic after 2-3 minutes.
4️⃣ Once the quinoa is cooked through add it into the frying pan. Mix everything together and add the hoi sin sauce, chili powder and paprika powder. Season with salt & pepper.
As a side dish I pan fried 100g tofu and added 50g of kimchi from a cute Asian store around the corner from where I live. It both matched perfectly with the spices of my quinoa salad. 🙈
