VEGAN HIGH PROTEIN LENTIL RICE & BRUSSELS SPROUT BOWL 🌝
Today’s dinner was so easy and contained 41 GRAMS OF PROTEIN! This leaves me wondering: What is your favorite vegan protein source? 🤩
I love love love tofu, chickpeas and lentils. I was so happy when I spotted this lentil rice at lidloesterreich last week (before my quarantine 😬). It was really good and a perfect high protein alternative to normal rice.
For the bowl I cooked the brussels sprouts, then fried it in a non-stick pan. I used the water from the sprouts to cook 50g of lentil rice in it. Besides that I fried zucchini with garlic as well as the tofu and seasoned it with paprika powder, salt & pepper.
Underneath all this there is also some salad and a dressing from 1 Tbsp of soy yogurt, 1 Tbsp of balsamic vinegar, a little bit of lemon juice and 1/4 Tsp agave syrup seasoned with salt & pepper.
Remember: Most times the most delicious things are the simplest to make! 🥰
