VEGAN RICE NOODLE ALFREDO 🙌🏽

100g Silken Tofu
40g Vegan Yoghurt (or more Silken Tofu)
10g Creamy Coconut Milk
10g Nutritional Yeast
10g Protein Powder (natural)
1/2 Tbsp Mustard
1 Tbsp Lemon Juice
Salt & Pepper
50g Rice Noodles
1️⃣ Boil water and pour over rice noodles / or prepare noodles according to package.
2️⃣ Mix yeast & protein powder and combine wet ingredients (except lemon juice). Heat up a pan.
3️⃣ Add dry ingredients into wet and combine well. Season to taste and pour into pan, immediately add rice noodles and stir.
▶️ Scallions are a perfect topping! I also added curried cauliflower (345g) and soy steaks (50g dry) from veganz (not paid). The whole plate had 515 calories and 52g protein.🙈
