VEGAN BERLIN BREAD BITES ❤️
Yes, that’s the common name in Germany for this type of bready cookie. I remember my mum baking “Berliner Brot” since I was a little kid and how it got better every day. It actually is can be stored for several weeks in an airtight container and is kind of a German version of Italian Cantuccini – it hardens up the longer it is stored!🙈
The recipe is very simple and you get quite a lot out of a single portion. I adjusted the recipe to be vegan & sugar-free and you can exchange the spelt flour for a gluten-free alternative.
The amount of cookies depends on the size of your tray (I used a normal oven sized baking tray) and the size of your cuts. I got the odd number of 117 pieces out of the recipe.😅

3 Flax Eggs:
3 Tbsp Flax Seeds + 9 Tbsp Warm Water
250g Vegan Butter
65g Apple Syrup (“Apfelkraut” or any kind of caramel-y tasting thick syrup)
4 Tbsp Rum (or Orange Juice)
100g Ground Almonds (or Hazelnut)
100g Chopped Almonds (or Hazelnut)
1 Tsp Baking Powder
400g Spelt Flour (or all-purpose/gluten-free)
50g Candied Orange Peel
50g Candied Lemon Peel
(both can be substituted with dried apples, candies ginger, dates or nuts)
Icing: Lemon Juice + powdered Erythritol/Sugar
1️⃣ Create flax eggs and let it soak. Meanwhile use a hand mixer to stir the butter at room temperature until creamy, add apple syrup & rum and stir until combined. Then add the flax eggs.
2️⃣ Combine flour, baking powder, nuts & erythritol and pour it gradually into the mixture. Add little splashes of water (if needed) to get an thick dough.
Pre-heat the oven to 200C (400F).
3️⃣ Line a baking tray with parchment paper and spread the dough evenly across best with slightly wet hands – it may be a bit hard but it’s worth it!
4️⃣ Bake for 20 minutes until the top appears golden brown. Take the tray out to cool down. Mix your icing and spread it over the whole bread and let it harden.
▶️ Cut your pieces as small or little as you’d like! I made 8 horizontal x 12 vertical cuts.
