GINGER-LEMON COOKIES 🍪🍋

Off we go with another easy recipe for some christmassy cookies your whole family will adore!

These cookies are so soft and light, you can’t imagine until you tried them! Save this recipe and enjoy your 1st day of December ❄️

🍴RECIPE for 21 Cookies🍴
[1/21: CALS 52 ~ 4.5C ~ 1P ~ 2.7F]

60g Coconut Oil
50g Erythritol (or other sugar)
50g Apple Sauce
1/2 Lemon Zest
1 1/2 Tsp Ginger Powder (more/less to taste)
125g Spelt Flour (or any other)
Pinch of salt

1️⃣ Melt the coconut oil. Mix all dry ingredients together with the lemon zest. Pre-heat oven to 180°C (360°F).

2️⃣ Add the oil & apple sauce and combine to a dough. Now form small balls with your hands and press them down on a lined baking tray.

3️⃣ Bake cookies for about 12 minutes or until the edges get golden. Let the cookies cool on the tray – they will be soft and harden when they cooled down.

⏺ Additionally, I melted some dark chocolate, mixed in some more ginger and spread it between two cookies.

Enjoy them plain or with some spreading! 😍
