VEGGIE FRIED RICE in ONE PAN

Happy new year everyone! Doesn’t it feel like 2020 has passed in just a few moments? I can’t wait for 2021 to become a more uplifting and happy year very soon! 😍

For this veggie stir fry you only need one pan or wok and that’s it! Well, except the ingredients🤫

🍴RECIPE for 2🍴
[1/2: CALS 491 ~ 61.2C ~ 30P ~ 12.7F]

1 Cauliflower (~500g)
1 Paprika (~140g)
1 Zucchini (~200g)
220g Cooked Rice (I used a pre-cooked packet from bensoriginalde )
200g Smoked Tofu
100g Corn (from a can)
100g Leek
3 Scallions

Sauce:
3 Tbsp Asian Mushroom Sauce / Stir Fry Sauce (keep an eye on the ingredients to make sure it’s vegan)
2 Tbsp Soy Sauce
1 Tsp Garlic Powder
1/2 Tsp Paprika Powder
1/2 Tsp Chili Flakes
Black Pepper

1️⃣ Toss all chopped veggies in a large pan with a good splash of water and let it simmer until the veggies get a little softer.

2️⃣ Before adding the rice remove any excess water that hasn’t evaporated. Then combine rice and veggies and fry.

3️⃣ Mix the ingredients for the sauce and pour it into the pan. Now stir and let it fry for a few minutes. Once the the veggies and rice soaked in all the liquid it’s time to eat! 😋
