CREAMY APPLE SPECULOOS CAKE w/ BLUEBERRY TOPPING 🍎🥧

Sooo, you decided and here it is: A really yummy low fat recipe with lots of protein and only 120 Cals per slice! 😊

🍴RECIPE🍴

135g Natural Protein Powder (unser_pflaenzchen )
80g Spelt Flour
70g Erythritol
1 Tbsp Baking Powder
2 Tbsp Apple Cider Vinegar
130g Apple Sauce
300ml Almond Milk
2 Apples
Speculoos Seasoning
Cinnamon

Topping:
150g Blueberries (I prefer frozen berries)
1 Tbsp Chia Seeds
1 Tsp Agartine

1️⃣ Mix all dry ingredients into a bowl. Grate the two apples and squeeze out the juice by using a clean kitchen towel. Put everything in the middle and then twist the towel until the juice comes out at the bottom. (Save it for later or drink it, if you’re thirsty 😋)

2️⃣ Pre-heat the oven to 150C (325F). Add wet ingredients into dry and combine well! Season to taste and fold in the grated apples.

3️⃣ Bake the cake for about 50 minutes until you can pierce it with a toothpick and it comes out clean.

4️⃣ Heat up a pot, add blueberries and mash them. Add chia seeds and let it simmer for a few minutes. Then add agartine while stirring and let it simmer for another 2 minutes. Turn down the heat and place the topping in a separate bowl to cool a little.

5️⃣ Let the cake cool down as well and top it with the blueberry topping once it thickened up.

Et voilà! Enjoy your healthy piece of cake with your fam or just eat it all by yourself 😍
