VEGAN BUDDHA RAINBOWL 🔐
I can’t get over the look and taste of this bowl! It’s so good and perfect for a quick dinner and you can adapt it with your favorite veggies, mine are obviously Pumpkin (as I told you in my soup recipe), Carrot and Broccoli. 😌

🍴RECIPE for 2 Portions🍴
100g Rice Noodles
1 Red Pepper
1 Can Kidney Beans
250g Firm Tofu
1 Tbsp Vegan Stir-Fry Sauce or Hoi Sin Sauce
1 Tbsp Soy Sauce
3 Tbsp Natural 🌱-Based Yoghurt
1 Tbsp Tahini
1/4 Lemon Juice
1 Tsp Soy Sauce
1/2 Tsp Hoi Sin Sauce
Optional: 1/3 Tsp Sriracha Sauce
1️⃣ Chop all veggies and combine tofu, cumin & soy sauce in a bowl. For the carrot spiral I used a peeler and cut straight from bottom to top. Heat up a pan and add the tofu into the pan, fry it for a few minutes and set it aside.
2️⃣ Use the same pan and add the pepper and some water. Wait until it’s gone and add the stir-fry sauce – season with salt & pepper.
3️⃣ Cook the rice noodles. Mix all ingredients for the dressing and set it aside. Time to plate everything with the arugula on the bottom.
