EASY PROTEIN DINNER BOWL 👋🏼

I know the bowl looks a little plain, but every single part of it has a special flavor that tastes so nice when eating combined. 🙉

I also ate it with a simple tahini & lemon sauce, so feel free to add your favorite dressing to the bowl! 😋

🍴RECIPE for 2🍴
200g Tofu (I used Basil flavored Tofu)
100g Red Lentil Rice (or any other grain)
400g Broccoli
100g Bell Pepper
150g Zucchini
100g Pumpkin
1 Red Onion
120g Cherry Tomatoes
1 Tsp Oil
Salt & Pepper
Cumin
Basil Flakes

1️⃣ Pre-heat the oven to 200C (380F). Cook your rice according to the package, cut broccoli (including the stem) and cook it as well.

2️⃣ Combine small pumpkin cubes and chopped onion with oil, salt & pepper and cumin and put it in the oven for 20 minutes. Heat up a pan and fry the tofu with some basil flakes, salt & pepper and set aside.

3️⃣ Use the same pan to slightly fry your zucchini and bell pepper together with salt & pepper (put a splash of water into the pan to soften the veggies).

4️⃣ Time to put everything on a plate and season it with another good pinch of salt, some cumin and pepper.

I’m always mixing together various ingredients to create my dressings. As I said for this bowl I combined tahini & lemon juice to which I also added a little Hoi sin sauce, garlic powder and 2 Tbsp of soy yoghurt.😅
