VEGAN CREAM FILLED LEMON CAKE [GF]🍋

This is def not the healthiest recipe but it’s in my opinion the prettiest I’ve posted yet! It’s a lemon cake with poppy seeds, filled with vegan cream cheese & raspberries.💕

🍴RECIPE for 10 Pieces🍴

I used a 11x27cm loaf pan

🎂Cake Batter
320g GF Flour (or all-purpose, spelt etc.)
6g Baking Powder
1 Tsp Baking Soda (or a little more Baking Powder)
Pinch of Salt
120g Erythritol (or Xylitol, regular Sugar etc.)
20g Poppy Seeds (optional)
130g 🌱-Based Butter
1/2 Tsp Vanilla Extract
250 ml Almond Milk
1 Lemon (Juice & Zest)

Filling & Topping
300g 🌱-Based Cream Cheese
1/2 Lemon (Juice & Zest)
30g Powdered Sweetener
Few drops of Vanilla Extract
125g Raspberries

1️⃣ Pre-heat the oven to 180C (350F). Batter your baking pan and sprinkle a little flower to make it non-sticky.

2️⃣ Combine the milk & lemon juice and let it sit for 10 minutes (until it’s flaking). Melt the butter and add the vanilla extract.

3️⃣ Whisk all dry ingredients together. Add the milk, lemon zest & butter and gently combine dry and wet ingredients until the batter is smooth.

4️⃣ Pour the batter in the pan, even out the top and put it into the oven. After 20 minutes use a knife and cut the top lengthwise about 1cm deep. Lt it bake for another 30 minutes and check the texture of the cake with a toothpick. Let the cake cool off in its pan.

5️⃣ While the cake is baking, mix together the filling (without the raspberries) and place it in the fridge.

6️⃣ Let the cake cool of entirely before you use a bread knife and cut it in half. Now use 2/3 of the filling, spread it on both inner sides with a spatula and place the raspberries on one side.

7️⃣ Place the upper half back on the bottom and fill in the outer gap with more filling, add the rest on top.

That’s it! I decorated the cake with even more berries, lemon and poppy seeds. It has been a full banger and even though there a a few steps required, this cake is pretty easy to make🤩
