VIBRANT TURMERIC RICE with PLEASING CREAMY VEGGIES 💆🏽♀️

🍴RECIPE for 2🍴
1 Red Pepper
100g 🌱-Based Cream from alpro
1 Tsp Turmeric Powder
1 Tsp Garlic Powder
1/2 Paprika Powder
Salt & Pepper
1️⃣ Cook the rice according to its package. Cut the veggies and the tofu. Place the eggplant in a bowl, gently sprinkle salt on top and let that rest for about 10 minutes.
2️⃣ Start frying the zucchini and pepper. Rinse off the salt from the eggplant pieces and add them to the pan. Let everything fry, add the cream and seasoning.
3️⃣ Once your rice is cooked, season it with turmeric, salt & pepper and combine it with your scallion. I also added 200g of Tofu to a pan and fried it as a protein source.
