SIMPLY DELICIOUS SPAGHETTI BOLOGNESE 🍝

I’m back with a new recipe! Since I’m spending quite some time with my loved ones at home, I try to not spend too much time on my phone. BUT surely I don’t forget you guys!

Here’s a healthy 500 CALORIE vegan bolognese recipe you will def enjoy and want more of – including 40G of PROTEIN per Portion!

🍴RECIPE for 2🍴
160g Spaghetti (I used lentil spaghetti for more protein and a GF version)
200g Canned Chopped Tomatoes (or Tomato Sauce)
180g 🌱-Based Mince (I always use ruegenwaldermuehle)
2 Red Peppers
160g Carrots
100g Zucchini
10g Tomato Paste
1 Red Onion
2 Cloves Garlic
Salt & Pepper
Basil, Oregano & Thyme

1️⃣ Finely chop all veggies. Cook the pasta according to the package. Heat up a non-stick pan and add the onion, 1/2 garlic & mince.

2️⃣ Add and stir in all veggies. Fry for 2-3 minutes and then add the canned tomatoes. Let everything simmer until the bolognese thickens up, add tomato paste and seasoning.

3️⃣ Depending on the texture you prefer, you can add some water from your cooked pasta to the sauce.

That’s it! Enjoy your delish spaghetti bolognese for lunch, dinner or for snacking 😝 Also you can totally skip the pasta and just eat the sauce like that or dip in some bread!
