Marble Porridge with Carrot Cake Bites & Roasted Apples 🥧🥕


Well, it’s official: I’m in quarantine, if you haven’t seen it in my story yet and even though today is the first day I’m already bored! 😂

Yesterday I’ve made the C***** test and I’m now sitting in my shared flat, avoiding my room mate (who got tested today), working out to get some movement for my body and being anxious when the result is coming in – obviously also crossing fingers that it’ll be negative!

Nevertheless, here’s a beautiful & really yummy breakfast bowl including my protein porridge (Recipe is already in my feed) and some swirled in soy yoghurt.🙌🏽

On top some pan roasted apples with cinnamon and cut down VEGAN CARROT CAKE BITES. 😍

🍴RECIPE for 12 Pieces🍴

2 Tbsp Flax Seeds (or Chia Seeds)
5 Tbsp Warm Water
170g Flour (I used Spelt)
180g Carrots (2-3)
50g Sugar (I used a sugar free Substitute)
125g Apple Sauce
1 1/2 Tsp Baking Powder
1 Tsp Cinnamon
1 Tsp Nutmeg
1 Pinch of Salt

75g Plant-Based Yogurt

1️⃣ Pre-heat your oven to 200°C (400°F). Create a Flax Egg by mixing water & flax seeds. Grate the carrots.

2️⃣ Mix together all ingredients except the flour. Add the flour afterwards.

3️⃣ When your batter has an even consistency place, line a small baking tray with baking paper and pour it in.

4️⃣ Bake the cake for about 20 minutes. Let it cool down and top it with the yogurt topping if you like. (It gets harder once put in the fridge)
