FUDGY SWEET POTATO BROWNIES [GF]🐻
My first attempt was a total win! These brownies are SUGAR-FREE, GLUTEN-FREE, LOW CALORIE and most importantly: Soooo GOOD and non-vegan boyfriend approved!😍
🍴Recipe for 16 Pieces🍴
1 large Sweet Potato (200g cooked)
120g Creamy Nut Butter (I used peanut)
45g Gluten-Free Flour (all purpose or spelt works just as good!)
50g Cocoa Powder
20ml Plant Milk (I used almond)
1 Tsp Baking Powder
1 Tsp Vanilla Flavor
1 Pinch of Sea Salt
80g Vegan Choc Chips
20g Vegan Choc Chips
20g Almond Croquant
1️⃣ Pre-heat your oven to 180C (350F). Cut the sweet potato into small cubes and cook it until soft. Strain off water and mash up the cubes with a fork into an even purée.
2️⃣ Combine all ingredients with the purée except the choc chips. Now fold in the chips.
3️⃣ Place parchment paper into your tray and spread the batter evenly inside. Sprinkle it with your toppings and bake it for ~25 minutes.
Let these bad boys cool before you cut into them and then enjoy them with some ice cream or dip them into a glass of your favorite 🌱milk!
