3 INGREDIENT COCONUT MACAROONS 🥥
These are the cutest holiday treats for the whole fam! They are super easy to make you only need 3 pantry ingredients and 20 minutes.😋

80g Shredded Coconut
30g Aqua Faba (Water from a can or glass of chickpeas)
40g Powdered Erythritol
1️⃣ Drain chickpeas and sieve the water again to make sure there are no lumps in the aqua faba. Pour it in a (non-plastic & non-greasy) bowl and beat it up like egg whites.
2️⃣ Once the aqua faba gets white and creamy, add the powdered erythritol step by step and beat it even more.
3️⃣ The mix of aqua faba and erythritol should get stiff after a few minutes beating up. Then fold in the shredded coconut (use more if the mixture is still pretty wet or if you used larger shreds).
Pre-heat the oven to 180C (360F).
4️⃣ I used a measuring tablespoon, pressed in the mixture and carefully pushed it out on one side. You can surely create balls with your hands or use other forms!
5️⃣ Bake the coconut macaroons for 10 minutes and let them cool down entirely before touching (they need to harden first).
Seems like a lot but the taste is worth it! Even my dad liked it and he is no fan of coconut at all haha 😬
