EASY CAULIFLOWER 2 WAYS šš¤š¼
Only a few of you guessed right, I intended to make cauliflower pureĢe! But before it turned out creamy and light it def couldāve been risotto haha – it all depends on how long you blend the florets š¬
Either way: this is a healthy, low calorie and protein rich recipe that you need to try!

š“RECIPE for 2š“

1 Onion (~85g)
2g Oil
1 Cauliflower (~700g)
5g Vegetable Stock
Water
2 Cloves Garlic
100g Soy Yoghurt
35ml Almond Milk
5g Nutritional Yeast
10g Natural Vegan Protein (or 10g Flour)
Parsley (to taste)
Salt & Pepper
Cumin
Nutmeg
1ļøā£ Use a large pot & fry chopped onion in oil. Add Cauliflower florets & stem (cut) and the broth. Pour in water until it covers the cauliflower. Let it cook until the cauliflower is done.
2ļøā£ Risotto: Drain the cauliflower and use a blender to turn it into rice. Put the cauliflower back into the pot. Whisk yoghurt, yeast, protein & milk together and pour it in. Let it simmer.
3ļøā£ PureĢe: Drain the cauliflower and blend it with the mix of yoghurt, yeast, protein & milk. Blend further to have an even creamier texture.
4ļøā£ Add garlic, parsley & seasoning and either (risotto) fold it under the cauliflower or (pureĢe) blend again.
