CREAMY WHITE PROTEIN BOLOGNESE šŸ¤™šŸ¼

Have you ever tried making a bolognese without tomato sauce? I did yesterday, and it turned out really delish and light 😊

Actually, I just forgot to buy canned chopped tomatoes but was really craving pasta with bolognese, so I took what I had left in my pantry and that was vegan cream from alpro šŸ˜…

60g Dry Soy Mince ( veganz Soja-Granulat) – or use scrambled tofu
150ml Vegan Cooking Cream
10g Tomato Paste
100g Zucchini
80g Cherry Tomatoes
1/2 Can of Kidney Beans
10g Nutritional Yeast
1 Clove Garlic
1/2 Lemon Juice
Paprika Powder
Salt & Pepper
5ml Oil

1ļøāƒ£ Prepare the mince as instructed on the package and press out as much water as possible (same when using firm tofu).

2ļøāƒ£ Pre-heat a pan with oil and add the zucchini & mince/scrambled tofu to fry. Once the zucchini gets some golden edges, add beans, garlic & seasoning.

3ļøāƒ£ Combine cream and tomato paste and pour it into the pan (add a splash of water if you want a runnier sauce). Give the bolognese a good mix and add lemon juice & cherry tomatoes.

4ļøāƒ£ Turn down the heat and season to taste. Place the sauce on top of pasta (mine is govindanatur chickpea pasta) or match it with a good slice of bread!
