Ginger Noodle Salad with Veggies and Smoked Tofu šŸŒššŸ’«

What a perfect day for a bowl full of carbs and colorful veggies – ready in only 15 minutes!

90g Spelt Noodles
100g Zucchini
1/2 Bell Pepper
2 Small Carrots
50g Smoked Tofu
2 Scallions
1 Clove Minced Garlic
1 Small Piece of Ginger (chopped)
Lemon Juice
Salt & Pepper

1ļøāƒ£ Cook the noodles until al dente and cut all other ingredients.

2ļøāƒ£ Fry the veggies in a pan, add garlic & ginger. Season with salt & pepper. Add the cooked noodles and stir everything together.

3ļøāƒ£ Place salad in a bowl and use some lemon juice to spice it up even more. Mix scallions and tofu under the salad.

On top I used the ā€œGemüse Chips Gewürzā€ from justspices and some cherry tomatoes. All together, it was amazingly delicious šŸ™ˆ
