BAKED PUMPKIN & ROASTED VEGGIES 😋
During Fall my oven is my best friend – for real! This dish was fully made in the oven and only took 5 MINUTES to prepare.
Take your favorite veggies like eggplant, carrot, red pepper and onion and toss them in a little bit of oil & your favorite seasoning. I always use salt & pepper, some minced garlic, chili powder and oregano.
For the pumpkin the same procedure and add some nutmeg – it matches perfectly!😍
On the side I had a simple green salad with balsamic dressing and spicy tofu! The whole dish only had 514 CALORIES.
