I made these beautiful gingerbread cookies already a few weeks ago and immediately fell in love with them! – as well as everyone else haha 🙈

Traditionally, Nürnberger Lebkuchen contain a lot of eggs but this vegan version is as fluffy and delish as the original! 🥰

[1 w/o Chocolate: CALS 158 ~ 16C ~ 4P ~ 9F // 1 w/ Choc: CALS 210 ~ 20C ~ 17P ~ 12F]

10g Flax Seeds
30ml Warm Water
30g Erythritol
50g Walnuts
100g Almonds
60g Spelt Flour
5g Baking Powder
50g Chopped Soft Dates or Dried Figs
100g Chopped Dried Apples
50ml Water
1 Tbsp Cinnamon
Pinch of Salt
10 Wafers (‘Oblaten’ Ø 50mm)

1️⃣ Roast the nuts in a pan for a few minutes, then blend them into small pieces (watch out they don’t burn and don’t turn into powder).

2️⃣ Create flax egg by mixing flax seeds and warm water – let sit for 10 minutes. Meanwhile, combine dried chopped apples with cinnamon.

3️⃣ Combine all dry ingredients, then add flax egg & water and blend in a food processor. Add fruits afterwards and knead them into the dough.

4️⃣ Pre-heat the oven to 170C (325F). Now form 10 small patties out of the dough and place them on top of the wafers.

5️⃣ Bake the Lebkuchen for 12 minutes, take them out of the oven and transfer them directly onto a baking rack.

optional: Melt 50g Dark Chocolate in a water bath and use a spoon to spread it on top of 5 pieces.
