CINNAMON STOLLEN BITES
After my cinnamon star baking fail – which can be admired in my story – I still have this recipe to share with you! š
Finding a vegan stollen in Germany isnāt very easy so I thought why not making some on my own. I got inspired by yummy.andfit , so go and check her account! š
š“RECIPE for 30 Bitesš“

100g Spelt Flour
30g Vegan Protein Powder (I used vanilla flavor)
1 Tbsp Baking Powder
50g Grounded Almonds
50g Erythritol
35g Vegan Butter
20g Apple Sauce
70g Soy Yoghurt
Cinnamon (I used alpi_nature Ceylon cinnamon – gifted)
Pinch of Salt
50g Dried Plums (or Dates or Figs)
50g Raisins
50g Marzipan
1ļøā£ Mix flour, protein, baking powder and almonds in a bowl. Melt butter and whisk it together with erythritol in a separate bowl. Chop dried fruits & marzipan and set aside.
2ļøā£ Add yoghurt, apple sauce and butter-erythritol mix into the bowl with flour. Add pinch of salt & the cinnamon to taste (my bites contained about 1 1/2 Tbsp) and knead the dough.
3ļøā£ Pre-heat the oven to 180°C (360°F). Fold in the dried fruits and marzipan. Flour a lined baking tray and place the dough ball top. Now, itās time to form a long roll (wet your hands a little, so the dough wonāt stick) and then cut it into small bites with a bread knife (also wet).
4ļøā£ Bake the bites for 10-12 minutes and immediately let them cool afterwards.
These bites are so yummy – trust me! You could also turn the recipe into a real stollen: just form a loaf instead of a roll. š„°
